The article investigates the transformation of production management within the Ukrainian baking industry under the pressure of deep crisis shifts during 2021–2024. Amidst military actions, energy instability, and disrupted logistics, the industry faces a systemic challenge: ensuring food security while maintaining operational continuity. The study identifies a critical gap between traditional management models and the demands of a highly uncertain environment, necessitating a transition toward a crisis-oriented management paradigm. This paradigm integrates crisis management instruments, organizational resilience, and business continuity planning (BCP) with the principles of corporate social responsibility (CSR). The research provides a comprehensive systematization of crisis factors affecting the baking sector, including economic inflation, energy deficits, and labor migration. A significant portion of the work is dedicated to characterizing the multi-level subjective structure of crisis management. It highlights the shifting roles of strategic top management, production managers, and highly specialized experts (technologists, risk managers, and ESG specialists) in making non-standard management decisions. The author emphasizes that “production elites” serve as centers for situational diagnostics and scenario-based planning under conditions of incomplete information. Furthermore, the article substantiates the role of ESG (Environmental, Social, and Governance) approaches as essential components of modern anti-crisis strategies. It argues that socially responsible production management involves not only survival and efficiency but also the fulfillment of obligations toward employees, local communities, and consumers. The study concludes that the synergy between Agile and Lean methodologies, predictive analytics, and European CSR standards forms a resilient management model capable of ensuring long-term competitiveness. Future research directions are proposed, focusing on the development of AI-based risk management systems and comparative studies of crisis-oriented practices between Ukraine and the EU.
