Amidst the global paradigm shift of market functioning from the VUCA state to the radically destructive BANI state, classical management models lose their effectiveness. These transformations are particularly acute in the agrifood sector of Ukraine, where the factors of full-scale military aggression, logistical disruptions, and labor shortages have critically exacerbated systemic exogenous shocks. The article provides theoretical and methodological substantiation of the conceptual foundations of agrifood enterprises’ adaptability and determines the role of adaptive management in ensuring their sustainability, competitiveness, and economic security. Based on systemic and evolutionary approaches, the concepts of “adaptation” and “adaptability” are clearly differentiated, with the latter defined as an immanent proactive characteristic of the system. The basic principles of constructing an adaptive mechanism are systematized, and the architecture of its preparatory-informational, functional-monitoring, and control-adaptive blocks is detailed. Taking into account the experience of overcoming the consequences of global crises, the key adaptive strategies of local producers are identified, and the feasibility of forming sustainable ecosystems through a tripartite “government-business-community” partnership based on clustering is proven. Central to the study is the econometric modeling of the dependence of profitability on adaptability factors. The application of the Farrar-Glauber algorithm allowed us to eliminate multicollinearity in multivariate regression models, ensuring high forecast reliability. Integrating the concept of hysteretic development into the forecasting toolkit allowed us to prove the strategic advantage of diversified agricultural structures over hyperspecialized ones under prolonged exposure to security and crisis threats. The proposed methodological complex serves as a reliable scientific basis for enterprise management in assessing adaptive potential, modeling managerial decisions, and selecting optimal development trajectories under conditions of high market incomprehensibility.
